The weather got pretty crazy last Thursday yes? Yes.
Although I’m not in Vaughan, around the block we did get this:

How lucky is that gas station owner that the building wasn’t built just a few feet closer to where those lights landed? Such a close call.
On Saturday my lovely friend Beth had her wedding shower in Richmond Hill. Sadly it rained quite a bit. Luckily that didn’t put a damper on things. Her sister Heather organized the event and food wise created these little sandwiches on green and pink breads. She also made a sandwich cake (amazing!). Apparently these kinds of things are a little more traditional for wedding showers. I was told that they normally had pastel sandwiches and things of that nature. I now feel like I have to try this out at home. The sandwich cake impressed me in particular. It was a layer of bread, then fresh pesto, bread, chicken with mayo and whatnot, bread, roasted red peppers, bread and then the whole thing was “iced” with cream cheese. You can see it in the photo below to the right. Again: AMAZING.
Because apparently food is super important to me- dessert was also delicious! Beth’s family is somewhat known for their trifle and my god is it tasty! We also had fresh fruit, tea in the cutest tea cups- and then fresh scones with Devonshire cream and jam. *dies* SO good!
And here’s a photo of Beth opening gifts. (Note the awesome colour combo in her outfit. Nifty no?) It was a really good time- got to see a few friends that I hadn’t hung out with in a while. Also Liam‘s mum managed to untangle my wool in the car on the way there which was pretty spectacular as it was driving me CRAZY!
In unrelated news, cooking escapades as of late-
Tuna Salad
Boil noodles and let cool, chop some celery, broccoli, or whatever vegetables you choose, throw them in with two cans of tuna- add miracle whip and stir. Voila! Easy quick side or summer salad treat.

Fruit Salad
I made this for a prior-to-the Wedding gathering. Chop a ton of fruit, in this case: honeydew melon, cantaloupe, 2 Royal Gala Apples, 1 Red Delicious, 2 peaches, 2 oranges, 1 grapefruit- mix in red and green grapes- make sure that the apples are coated with lemon juice so they don’t turn brown and mix together with a bit of orange juice. Ta da!
